Mushroom Pad Thai Ingredients:2 tsps of Coconut Oil1 Cup of Mushrooms1/2 Cup of Tofu Scramble1/2 Cup of TofuPre-Soaked Rice Noodles1 tbsp of GF Soy Sauce2 tbsp of Ketchup1 Cup of Bean SproutsOptional: Peanuts and Lime Over medium high heat, add mushrooms to hot coconut oil.
Add tofu scramble and cubed tofu and stir fry for 1 minute.
Add pre-soaked rice noodles, gluten free soy sauce and ketchup.
Stir fry for 1 minute to coat noodles in sauce.
Add bean sprouts and stir fry for 1 more minute.
Serve and Enjoy! Optional:Add lime & peanuts.
